Gastronomic cornerThe Croatian gastronomy, at the coast and on the islands, has grown on the tradition of natural and healthy Mediterranean nourishment, based on vegetables, with the addition of olive oil, fish, and shells and other sea food, goat and sheep cheese, and among the fruits, on marascue, grapes, figs and almonds. The specialty of our cooking is the way of preparing the food, and the doctors consider it as very healthy. However, the vegetables are being cooked in a small amount of water, and are spiced with olive oil, and other herbs such as rosemary, sage, basil, marjoram. The fish is being prepared in special sauces made of vegetables and spices, or is being grilled, and the meat baked in special ovens, in a special manner - the food is being put into a metal dish, and is covered with very hot ashes and flames; it gets a very excellent flavor. As starting courses, different cheeses are being served - smoked cheese, immature cheeses, cheese from oil, especially with ham and oils. Although for desert is recommended fruits - dried or fresh, cakes are also made with addition of different kinds of fruits and nuts. Dalmatian kitchen The main place belongs to fish - it is being prepared on several ways, grilled, cooked in special sauces made of vegetables and spices or in water and wine, with addition of spices and herbs, but is also offered in salt as well as in marinade. The most often and common spices are bay, garlic and inevitable olive oil. Shells and crabs are being cooked in salty water with vegetables and herbs; the natives call this way of preparation buzara. Famous Dalmatian specialty is pasticada. Typical Dalmatian sweets are fritule and rozata. And of course, what one cannot neglect is, that goes well with salty and sweets are - the quality Croatia wine. Croatian wines North Dalmatia: primostenski babic, drniski merlot, debit (popular white wine from the region). Middle and south Dalmatia: dingac and postup, carsko and knezevo vino, potomje, peljesac, putnikovic, rukatac, sv. Ana, bolski plavac, bolski opolo, bogdanusa, drnekusa, parc, mekuja, pelegrin, zlatan otok, posip, marastina, grk, plavac, admiral, lastovska marastina, viska vugava. Prosek as a liquor or desert wine is produced in wine sellers. |
